Swap your spaghetti for courgetti with this simple twist on a classic meal! Ever feel tired and sluggish after a meal full of pasta, rice or bread? That’s because these foods are full of sugars which form together to make starches – and go onto cause spikes in blood sugar.

In turn this leads to the secretion of insulin which is responsible for making your body tissue take up the sugar in the form of glucose. This leads to low blood sugar levels – and so you feel tired.

Keeping your blood sugar levels right is quite easy. Look at what is called the glycemic index of your foods. High glycemic index means high sugar content, low index means low sugar content. We think it’s just a question of balance really!

It’s also worth knowing that too much sugary and refined food allows bad bacteria to take over, this is simply because your good bacteria can’t thrive with a diet of over refined, sugary foods. One simple solution we love is to swap spaghetti for courgetti eliminating the high sugar content and filling our plates with nutrient dense, delicious gut friendly foods.

Ingredients

2 x Courgettes

Tablespoon of Virgin Olive Oil

Pinch of salt

Method

Ideally you will cut the top and tail from the courgette before turning it through a spiraliser. However if you don’t own a spiraliser a good alternative is to use a vegetable peeler. Slide the peeler length ways down the courgette creating ribbons. Heat a tablespoon of virgin olive oil in a pan before adding the courgette and cook for a few minutes until soft. Season with a little salt before adding to your usual Bolognese recipe.
